I have been a strict vegetarian for over 20 years. Vegetarianism and Spain are unfamiliar bedfellows but i have found that even in the most hardened carnivorous places something vegetarian can be found. L 'Estragon is one of a few places which appears to offer some gastronomic relief. This is our first clue: little competition and little with which a local might compare. I had onion soup to start. The liquor was insipid and watery, bathing undercooked and equally insipid onions. Nothing sautéed here. This was topped with a very soggy crouton of cheese-on-toast. Whoever made this cannot cook, or does not care, or has no knowledge of what makes a good onion soup viz good stock, good oil and a good quantity of caramelised onions. I then had crudities. I wonder why it is that a menu which appears to celebrate whole food (brown rice for instance) also uses three varieties of bottled gunk as dips? This is so unnecessary and lazy. Certainly unpalatable. Very poor bread. I then went onto vegetarian paella Another watery disaster which would have been much improved by good stock, saffron (present in many versions of authentic paella)and properly sauteed vegetables. Instead the brown (ie worthy)rice shared the dish with boiled vegetables and chunks of soya protein. A depressing dish. This is vegetarian cooking at its very worst.
